Oreo Fudge Brownies

Some days you just need a little boost. For me, a boost includes a whole pack of Oreos. 

Yep, this recipe contains a whole 154g pack of delicious cookies and cream combo and I do not regret a single bite. Nope. 

I've always had a soft spot for these little cookies. I could probably happily sit and just eat them by the packet. Is that bad?

The love affair only grew when I had the chance to go to the States for a couple of months for camp and oh baby, I lived off of them. Birthday cake ones specifically. That and banana boats.

But golden birthday cake Oreos, can you please make it over to the UK sometime soon please?

The classic Oreo will always be number one because they're so versatile. You can throw them into virtually any baked good and the combination will be magic. Brownies and Oreos still remain my top sweet fix and so far I've made three batches of these in the past couple weeks.

They are deliciously soft, squidgy and fudgey. No longer will you fight over that corner piece, oh no, you'll want that centre piece with its soft, gooey centre and crunchy Oreo top. That crunchy top is really quite addictive and I never realised how much I loved a crumbly brownie top, until I tried these.

Although it could have something to do with the Oreo crumbs running through it. Heart eyes. Just look at it.

Oreo Fudge Brownies Recipe | Hungry Little Bear

Oreo Fudge Brownies

Ingredients
165g butter
150g dark chocolate
50g milk chocolate
3 medium eggs
2 medium egg yolks
2 tsp vanilla extract
165g soft light brown sugar
1 tbsp cocoa pwder
154g pack of Oreo biscuits, roughly broken up

Directions
  1. Grease and line a 9x9 baking tin, allowing the greaseproof paper to overlap the sides. Prepare the middle shelf and preheat the oven to 180C/160C fan/gas mark 4.
  2. In a glass bowl over a pan of boiling water, melt the butter and chocolate together. Once melted, take off the heat to cool. 
  3. Whisk together the eggs, egg yolks and vanilla extract in a large bowl until mixture turns light and fluffy (this will take a few minutes). In two additions, add the sugar down the side of the bowl, so you don't knock the air out of the whisked eggs. Continue to whisk until the mixutre becomes stiffer (another few minutes of whisking).
  4. Next, pour the melted chocolate around the side of the bowl. Don't whisk together yet, instead add the flour, cocoa powder and half of the broken Oreos. Fold in gently until no flour is visible. 
  5. Pour the mixture into the prepared tin and then pop the remaining broken Oreos on top, pressing some down into the mixture. 
  6. Bake in the oven for roughly 30 minutes. Check after 25 minutes, depending on how hot your oven gets. The centre of the brownie should still be a bit gooey, but not wet. Leave to cool in the tin on a wire rack. Then pull out using the overlapped greaseproof sides and cut to serve.
