3 Ingredient Cookie Butter Truffles

Whip up a batch of these simple and creamy cookie butter truffles with just 3 ingredients!

3 Ingredient Cookie Butter Truffles | Hungry Little Bear

Christmas went by way too quickly for my liking.

It feels like the build up goes slowly but as soon as Christmas Eve arrives, it's over in a snap. Another 10 months until I can reason it being time to feel festive again.

Our kitchen was fitted in time for Christmas and we finally had more room to serve everyone. Which was a pretty big success. Pinterest has been a lifesaver for storage solution ideas. But a trip to Ikea seems to be in order as there's only so much you can scrounge up and re-purpose.

I'm definitely not complaining though, any chance to visit that dreamy place, I'll take it.

Custard Cream No Bake Cheesecake

A smooth and creamy no bake custard cream cheesecake, made with just six simple ingredients! Top with cream and berries for the ultimate sweet tooth fix.

Custard Cream No Bake Cheesecake | Hungry Little Bear

With our kitchen still out of action and building works set to continue for another few days, I'm really starting to miss my oven. And the sink, I think I may even miss that a bit more. It has been a total of 6 weeks and no oven has meant stealing my sisters for a few hours or sticking to no bake treats.

Which isn't all bad to be honest, especially when there's no bake cheesecake involved.

Mykonos Travel Guide

Ultimate Mykonos Travel Guide | Hungry Little Bear
You’ll probably have heard about Mykonos, the party town with the relaxed vibe. You’ll have seen it on Pinterest, with its picturesque cobbled streets, white sugar cube homes with colourful doors and the crystal blue sea. You’ll have heard about it from many of the big bloggers who have frequented the island.

And I’m here to say it’s every bit as perfect as you’d think it would be.

Festive Gingerbread Cake Pops 2 Ways

Festive Gingerbread Cake Pops 2 Ways | Hungry Little Bear

I'm officially in the Christmas spirit! Now that Halloween has been and gone and Bonfire Night has been celebrated with fireworks, it's acceptable, right?

So when Wren Kitchens got in touch and asked me to whip up a Christmas recipe with a twist, it was just the boost I needed to get started with some festive baking. Every year I end up planning all of these recipes I want to make over Christmas, some a bit more adventurous than others, some just involve sausage rolls.

But this year, I'm plan to keep on challenging myself with my bakes, like I did with the Bake Off Bake Along, starting with cake pops!

Lemon Surprise Fondant Fancies | Bake Off Bake Along

Lemon Surprise Fondant Fancies | Bake Off Bake Along
It seems my Bake Off favourites are just dropping like flies. First Benjamina, then Selasi, I just hope Andrew isn’t next! So sad to see the uber chilled Selasi go home this week. He was such a refreshing change from the regular stressed out bakers.

I’ll never understand how he managed to stay just so chilled during most of the tasks. I would be a wreck and probably run out of time. Or drop something.

Baking along with Bake Off has been a bit challenging at times, but this week tested me. Give me a big cake to frost and I can do it, but give me a tiny fondant fancy to frost and everything falls apart.

Jumble Biscuits | Bake Off Bake Along

Jumble Biscuits | Bake Off Bake Along | Hungry Little Bear
You can definitely count me as not a great fan of Tudor week. Not that it went horrifically wrong (like bread week), it just was a bit of a nothing week for me.

I settled on jumble biscuits this week, purely because we didn't have enough people around to devour a marzipan showstopper (sob) and I didn't have enough time in the weekend to tackle a hot water crust pie. Eek.

Banoffee Roulade | Bake Off Bake Along

Banoffee Roulade Recipe | Bake Off Bake Along | Hungry Little Bear
Well that was a tense time in the tent. I've never been so nervous because of mousse. I definitely was not brave enough to tackle that challenge this week.

I’d be perfectly okay with eating one of them though.

Some of the bakers had the right idea with putting jelly on top; they looked so professional and swish. Jane and Andrew were the standouts in the showstopper for me, both their desserts looked beyond perfect and the flavour combinations were just bloody delicious.

Bakewell Tart | Bake Off Bake Along

Bakewell Tart | Bake Off Bake Along Week 5 | Hungry Little Bear

Another week in that glorious white tent and a pretty disastrous week for Val. I was so gutted to see her and her dancing self be sent home this week.

We all knew she wasn't the best baker in tent but she was one of my favourites. Her speech at the end just made me love her even more...

"When you bake, you always bake for a reason. You’re giving it to people, so you make it the best you can and you make it with love. And whenever I make anything, I stir love into it, I knead love into it, so when I present it, it’s special."

Apple Cinnamon Churros with Salted Caramel | Bake Off Bake Along

Well this week of Bake Off was tense. I've never felt so protective over a Yorkshire pudding and never cringed so much during a challenge. How can so many people get Yorkshire puddings so wrong?

Also lace pancakes, why? Where's the rest of the pancake? You can't coat that lace in Nutella.

But ah that showstopper of churros. You just can't go wrong. I remember so fondly of the first time I had tried churros on a family holiday to Spain. We had sat down to an entire plate (to share) of the delicious cinnamon sugar covered doughnut treats and we were hooked. They were gone in minutes.

Chocolate and Cinnamon Babka | Bake Off Bake Along

Bake Off Bake Along - Week 3: Chocolate and Cinnamon Babka
Bread week has tested me. I knew it wouldn’t be easy and I dreaded this week at the start, but it pretty much confirmed why I hate working with yeast. It also reaffirmed my love for cakes.

There were a lot of uncooked breads on GBBO this week and I feel their pain. Although mine wasn’t uncooked, it didn’t rise correctly in its proving. It probably wasn’t helped by me trying to do a 5 hour babka in just 2 and half hours.

And that I only gave it one prove. Yeah, that was probably a bit stupid.

Iced Doughnut Biscuits | Bake Off Bake Along

Bake Off Bake Along - Week 2: Iced Biscuits

If there is one thing you should know about me, it’s that I love doughnuts.

So when it came to picking from one of the challenge from this weeks Bake Off and having already made Viennese Swirls and nearly died from a sugar coma from them, I picked out the signature challenge of 24 iced biscuits.

That and I couldn’t face the idea of doing a gingerbread story scene just yet.

Jaffa Cakes | Bake Off Bake Along

Bake Off Bake Along - Week 1: Jaffa Cakes

I feel like I might be a bit late to the #BakeOffBakeAlong? But life got in the way and stopped me from trying my hand at a Bake Off challenge. Until now, because, let’s face it... who can resist a jaffa cake? I definitely can’t.

Strawberry Fields

I never realised how relaxing picking your own fruit would be. Now I can safely say, I would pick raspberries forever if I could.

Having made a plan months ago to go fruit picking over the summer, my sisters and I took a day off from work, gathered up my tiny nephew and set off for the fields of fruit.

2 Ingredient Pizza Dough

2 Ingredient Pizza Dough Recipe | Hungry Little Bear
I’m all about recipe shortcuts. From one bowl, no mess cakes to 15 minute dinners, anything that makes the process easy and still delicious, I’m willing to try!

So after seeing a 2 ingredient pizza base on Buzzfeed, I was sold. Making any kind of dough is very time consuming, from the kneading to the rising to working with yeast – eek!  It all takes time, especially if - like me -  you don’t have a stand mixer that kneads it all for you too!

Lazy goals.

Oreo Fudge Brownies

Oreo Fudge Brownies Recipe | Hungry Little Bear
Some days you just need a little boost. For me, a boost includes a whole pack of Oreos.

Yep, this recipe contains a whole 154g pack of delicious cookies and cream combo and I do not regret a single bite. Nope.

I've always had a soft spot for these little cookies. I could probably happily sit and just eat them by the packet. Is that bad?

DIY Chevron Noticeboard Tutorial

DIY Chevron Noticeboard Tutorial | Hungry Little Bear

This noticeboard has been with me since uni and I've been pinning my to do lists and things to remember ever since. But in an attempt to declutter and be minimal (like that will ever last), it was on its way out to find a new home.

Enter Pinterest. The mothership of all the possible DIY ideas you could think of.

I saw so many different ways people had redesigned their boring, brown noticeboards into pretty and simple designs that weren't a complete eyesore above your workspace or too difficult to do either.

So in attempt of achieving a Pinterest worthy desk and getting all organised once again, I whipped out the paintbrush and got to work.

I’ve been trying to get into a healthy sorta mind frame over the past month, but really that’s just led me to craving doughnuts and Jaffa cakes. Enter this monster of a Jaffa cake loaf.

Borough Market in Spring

When in London... go stuff your face at a food market. That's the general rule, right?

Borough Market in Spring, London | Hungry Little Bear

Borough Market in Spring, London | Hungry Little Bear

After a morning visiting the Sky Garden and taking in the views of Tower Bridge and the Shard, one sunny weekend, we found ourselves in Borough Market. The smell of the food market is insane and it hits you as soon as you spot the first umbrella. From curries, to grilled cheese, to fresh baked goods, to bratwurst, to burgers. Borough Market seriously has it all.

London from the Sky Garden

You’d think that living just an hour away from London that I’d visit more often, but sadly not. The hustle and bustle of the city isn’t enough to keep pulling me back, but finding little gems like this place does help.

For my sister's birthday, we wanted to do something special, a little adventure. We set off to find places we'd never been before all over London. One of those places was the Sky Garden.

Nestled away on Fenchurch Street just a few minutes walk from Monument tube station, stands the unusually shaped building. 155 metres up is a large glass dome which houses 3 storeys of public gardens. It’s essentially a greenhouse in an office building, with an observation deck as a bonus and it’s all kinds of pretty.

Healthy Almond Crisp Bars

I am a serial snacker.

Especially at work when I’m sat at a computer for so many hours, trying to resist those rice cakes in my drawer and the mini cheddars in my bag and lunch can’t come quick enough, and I’ve already drank two cups of green tea to keep hunger at bay and seriously, why isn't it lunch yet?

72 Hours in Berlin

Long weekends away are always a good idea. They’re exhausting and of course long, but it’s amazing how much you can squeeze into 3 days in a new city.

Long Weekend in Berlin | Travel | Hungry Little Bear

Berlin is a much talked about city, with its chilled out vibe, delicious food (hello bratwurst and all the burgers!) and so much history to take in on top of it all.

So with us all in need of a holiday, we booked the cheapest flights over to Berlin, grabbed ourselves a central hotel in Checkpoint Charlie and packed our bags. Going at the end of February, the Christmas markets were long gone, but the charm was still there.

Even if it did rain 2 out of the 3 days we were there. Thanks, Berlin.

I've meaning to make a chocolate bark for quite a while now. After lusting after every possible combination known to Pinterest, I've finally done it.

I love mini eggs. Let's just get that out of the way now. Yes, the recipe may have changed recently and the chocolate may not be as Cadbury creamy.  But they're still my favourite treat at Easter.

For a while now, I've been in a blogging rut. Completely stuck, not motivated at all. Despite my promising start to year by making all these goals and promises to stick to a better schedule, plan more and bake more.It was just all downhill from there.

Before I had even started, I just felt stuck.

A little slice of paradise in Dubrovnik

Travel post: Dubrovnik, Croatia - Hungry Little Bear

Everyone has a special travel memory they hold close, one that fills them with warm happy feelings and makes them want to pack their bags to go back immediately. For me, one of those places is Dubrovnik.

When my sister announced she had to go to Croatia for work for a week, I immediately offered to come with her. I mean, who wouldn't?

In my geeky mind, I was thinking about all the Game of Thrones locations I could see but the pretty sea, terracotta roofs and charm of the old town won me over.

Blog Goals for 2016

Blog Goals 2016 | Hungry Little Bear

Last year definitely had its ups and its downs for me. My nephew being born was definitely an up! Cheesy as it sounds, it's amazing to see everything through his eyes now. His laugh is also the cutest thing ever.

Landing a solid job post-uni was another highlight, but the journey to it was not. Temp work and being unemployed for months is not fun. I started putting more time into this blog, but still haven't done as much as I would have hoped.

There have been so many times that I've had a baking idea in my head and then forgotten about it or made it and it's eaten it before photos can be taken. There's also been baking fails - some I'm just never attempting again. Ever.

Blogging is definitely not as easy as some may think it is. It's not all sunshine, baked goods and pretty photos. Everything takes a lot of time and a lot of effort. Which is why I've put together some blog goals for this year.

Everyone makes resolutions at the start of the year but I can never stick to resolutions. There's too much pressure and they just end up making you feel like a failure. Goals sound a lot more attainable and realistic.

2016, I've got big plans for you!
